TURKISH DELIGHT WITH LENTISK MASTIC

Ingredients: 4 servings

2 cups sugar

1 cup water

½ cup toasted almond or pistachio nuts, chopped

½ teaspoon cream of tartar (or two tablespoons of lemon juice)

2 tablespoons cornstarch

1 tablespoon mastic - strawberry, orange, lemon or rose flavouring

Red, yellow, green or orange food colouring

Confectioners' sugar

 

Preparation:

Dissolve sugar and cornstarch in water, add cream of tartar. Boil it, and turn off the heat; cover the pot, 5 minutes. Add flavour, food colours and nuts. Pour into an oiled shallow pan. When cool, cut into squares and roll each piece in sifted powdered sugar.
