BAKED ONIONS WITH ROSEMARY

Ingredients: 4 servings

4 medium yellow onions, with peel

3 sprigs fresh rosemary, finely chopped

1 small cup bread crumbs

Extravirgin olive oil, salt, pepper as needed

 

Slice about 1/4 inch off (tops and bottoms) of the onions. Cut in half crosswise leaving the skin on, and arrange them cut side up in a shallow baking dish. Dust with salt. Mix gently bread crumbs, rosemary, salt, pepper. Stuff this mixture on top of the onions, then drizzle with olive oil. Bake uncovered for 30 minutes in the preheated oven (400 ° F - 200 C°), or until onions are browned.
